Inspired by a Greek recipe from Sparta, Chef Enzo Pettè, of Hostaria Bibendum restaurant in Florence, Italy, collaborated with O&CO. to create this rich and fruity olive paste. The contrasting flavors of black olive and dried fig, which exemplify Mediterranean cuisine, are best highlighted when simply spread on bread or crackers. A wonderful, subtle addition to all types of slow-cooking: osso-buco, short ribs, or any stew and sauce.
